MEET HIRAI-SAN'S KYOTO BEEF MIYABI

Located in Nantan city, Hirai-san’s farm raises approximately 1700 beef cattle. The animals are raised for an average of 32 months, which is 4 months above the national average of 28 months. These cattle are being raised with a particular emphasis on above standard living conditions, freshwater, and high-quality feed to provide a stress-free environment. Above all, the love Hirai-san has for her cattle is indescribable.

SUSTAINABLE AGED WAGYU JUKUHO
In Jukuho Farm, the animals are raised for an average of 100 months. The farm focuses on sustainable farming and refattens Keisan-gyu. Keisan-gyu are Wagyu raised for the purpose of breeding. However, once they finish the role of breeding, Jukuho farms then start feeling healthy meals to the animals with a lot of love and attention on a rich natural environment. Albeit the meat of castrated and heifer is considered to be more marbled, Jukuho Farms have been changing the industry by producing sustainable beef with a deep umami flavor.
